Paying homage…
Our story started in May 1997 when we first got together, both of us not really knowing how to cook, just worked in the food industry - both together and separate.
Jen’s Paw-paw owned and operated George’s XXX (changed to George’s Drive Inn in the 80’s) from 1956 until he passed in January 1999. It was known as ‘Home of the Black Cow’ where he held car shows, swap meets and had classic cars on display while he served up those delicious burgers and of course - THE BLACK COW (root beer float)! We couldn’t keep the restaurant alive after he passed and that was always a dream of Jen's mom.
We started our catering business in 2011 with Concept Therapy Institute being our biggest client. We catered part time and always had a dream of starting a food truck. Brick and mortar would have been another awesome venture but this vision was where we wanted to head to keep overhead down and to highlight our best creations!
Fast-forward to April of 2023, we made that dream come true! We bought an ice cream trailer off a couple in Lakehills and flipped it to make it an operable kitchen. (We will forever be grateful to Holly & Bryce Benton, may he rest in peace.)
Our menu was still in the works by the beginning of May and we bounced around several ideas. We landed on 'Papas, Tapas y Mas' with loaded bakers, fries and tots as well as some other snacky staples.
On May 17, 2023 we lost Georgia (Jen’s mom). We knew from that moment we had to recreate Paw-paw's legacy. We had to honor George & Georgia! We changed directions and went with burgers! Our first menu would prove to be too ambitious, we realized quickly we had to KISS it (keep it simple, stupid)! Our current menu is a little bit of everything and a lot of fusing the burger concept with different flavors!
